避競爭少煩顧客 美更多餐廳不收小費

餐廳不收小費，目前還不大普遍，但從紐約到洛杉磯，愈來愈多餐廳

已開始不收小費。大張旗鼓新開張的加州葛蘭岱市 (Glendale)

「Brand 158」餐廳，就是最新的「異類」。

該餐廳的老闆費瑞姆 (Gabriel Frem)明白說出他的理念。他認為，

小費會破壞工作環境，他不鼓勵員工為小費競爭，不希望員工每周不

確定自己能帶回家多少錢。他說：「我們認為，如果我們能穩定員工

的生活，他們將會更專心為顧客服務。」

紐約市43街知名壽司店「Sushi Yasuda」更進一步，店員會追到店外

，把顧客給的小費退還。店東羅森堡 (Scott Rosenberg)說，為企檯

的服務打分數，再計算給多少小費，讓用餐顧客不勝其煩。
